Tajima beef (known as 'Tajima gyu' in Japanese) comes from a family of purebred specially raised wagyu cattle. It is the origin of the world famous Kobe beef. The special characteristic of Tajima beef is its high level of marbling. It is especially delicious when eaten as shabu-shabu, lightly cooked steak and sukiyaki.
