Tajima beef (known as 'Tajima gyu' in Japanese) comes from a family of purebred specially raised wagyu cattle. It is the origin of the world famous Kobe beef. The special characteristic of Tajima beef is its high level of marbling. It is especially delicious when eaten as shabu-shabu, lightly cooked steak and sukiyaki. Several ryokans in Kinosaki specialise in full course Tajima beef dinners. Be sure to check with your ryokan about their dinner specials and try this highgrade, delicious beef.
